In rendering, the fat is heated, causing the connective tissues to brown and turn crispy. Removing the skins immediately after they are cooked is difficult because the hot potatoes are hard to handle. You plop a tablespoon or so of the chicken base into the water that the potatoes simmer in. Since you have the mashed potatoes ready to go, you get to save significant time! I am sure if you make this you will be happy with the results. Dot the top with the remaining 1 tablespoon of butter, broken into little pieces. I could work a bit harder to get them out I suppose, but why would I want to do that? When you’re ready, remove it from the fridge at least an hour before baking (a couple of hours before eating) so the center won’t be so cold. The amount of water in the half-and-half combines with the starch molecules which makes the potatoes gluey. Uncover, and continue to cook on high for another 30 minutes or so to release condensation.
